For over a decade, cow dairy gave me gas, bloating, pain, and weird bowel changes. It was fast. It was obvious. And honestly?

I ate dairy.

Let’s clear something up first.

Not all food sensitivities work the same way.

Some are temporary. These often happen when your gut feels inflamed, irritated, or overwhelmed.

Think:

  • High FODMAP foods
  • Histamine foods
  • Spinach
  • Apples
  • Garlic
  • Onion
  • Broccoli

I see clients reverse these sensitivities all the time.

Why?

Because once digestion improves, these foods often stop triggering symptoms.

That’s what happened to me with the low FODMAP diet.

In 2015, 2016, and 2017, I could not handle garlic, onion, apples, or broccoli.

By 2018?

I could eat them again.

That was huge.

But dairy felt different.

Dairy landed in what I call the “permanent food sensitivity” category. This means the immune system appears more deeply reactive.

Here’s the part that surprises people.

My dairy intolerance did not start with bloating.

It started with insomnia.

In spring 2015, I woke up in the middle of the night and could not fall back asleep.

Then I would eat breakfast.

Usually cereal with milk.

And then I would crash.

I felt exhausted after eating.

Eventually, I wondered, “What if breakfast is the problem?”

So I removed dairy.

I may have removed wheat too.

And my insomnia disappeared.

Gone.

I slept through the night again.

That was my first clue.

Then, a few months later, everything went sideways.

In summer 2015, I started getting:

  • Gut pain
  • Bloating
  • Horrible gas
  • Smelly gas
  • Food reactions
  • Weight loss
  • Hair loss
  • Missing periods
  • Constipation

I first thought I was accidentally eating dairy.

But I wasn’t.

That’s when I realized something scarier.

My body was reacting to more than dairy.

By fall 2015, I met someone eating low FODMAP.

I ate low FODMAP for one week.

My symptoms improved dramatically.

So I went home and became low FODMAP, gluten-free, and dairy-free.

It helped.

But it did not heal me.

And this is where most people get stuck.

They think symptom control equals healing.

It does not.

A restrictive diet can calm symptoms.

But it rarely fixes the root cause.

From 2015 to 2018, I tried everything.

Probiotics.

Kombucha.

Supplements.

GI doctors.

Meditation.

Prayer.

Walks.

Stretching.

Clean eating.

All the “healthy girl gut healing” things.

And honestly?

Most of it did not work.

I had a probiotic graveyard.

I kept buying bottles.

I kept hoping the next thing would fix me.

But my body needed root-cause work.

The first real shift came when I found visceral manipulation through a pelvic floor therapist.

She worked on adhesions around my organs, nervous system, brain, spinal cord, and gut.

Think of adhesions like stuck fascia.

I did not start with a giant glass of milk.

Please do not do that.

I started carefully.

First, I had butter.

Butter tends to have less lactose because it is mostly fat.

Then I tried high-fat dairy.

I tested:

  • High-quality ice cream
  • Heavy whipping cream
  • Cheese
  • Sour cream
  • Cream cheese

I chose higher-fat options first because they usually contain less lactose than milk.

And I only tested dairy because my symptoms were already very low.

That part matters.

You cannot clearly test a food when your body already feels terrible.

If you feel bloated every day, how will you know what triggered what?

You need a baseline.

Low symptoms.

Stable digestion.

Then you test.

That’s how I knew dairy was not bothering me.

Because I felt good before.

I felt good after.

And I kept feeling good.

This is why I do not recommend random food challenges when your body feels inflamed.

That turns into chaos fast.

Instead, calm the body first.

Then test.
